The Master Bus Fader is coloured red because it IS a Master Bus. There is no way to change just the Fader colour to anything else, on either Strips or Busses. If you need to colour code elements in your Mixer, do it with the background colour. For Strips, that's determined by the associated Track's Waveform display Background Colour. For Busses, there is an entry in the pop-up menu which appears when you hover your mouse pointer over one of the little + or - boxes at the bottom of each Bus in the Mixer.
